Speaker Spotlight- Shanita McAfee

Shanita McAfee

Shanita McAfee, Chef & Proprietor of Magnolia's, a Kansas City full service boutique catering and event planning company, culi-nary passion began at age 14 when she began testing her culinary creations on her younger siblings. She attended the Culinary School at Johnson County Community College where she received a silver and bronze culinary award as a member of the 1998-2000 Culinary teams. McAfee continued to develop her talent with opportunities in some of Kansas City's well known res-taurants such as Rockhill Tennis Club, Kansas City Country Club, Yia Yia’s, Dean & Deluca and The Lodge of the Four Seasons.

After a brief stint in Financial Services, McAfee returned to her passions of cultural diversity in foods. In 2008 Magnolia's bloomed from her admiration of Southern Chefs Edna Lewis & Scott Peacock. Chef McAfee also shares the believe that there is value in understanding the connection between the rich culture and history of the south, its people, seasons, and the natural rhythm of life. She believes that in addition to the nutritional value there are other benefits that come from the celebration of breaking bread. Shanita McAfee is a devoted of mother of three whom she enjoys sharing her love for food and nurturing their inner culinary artist. She is also recognized as an active member of her community. She serves as Co-Chair of First Book Mo-Kan Advisory Board ,Recording Secretary for Johnson County Chapter of Jack & Jill, youth mentor on the Generation Rap Radio Show broadcast that airs on KPRS 103.3.

Her Honors include in being nominated as one of 2010 Kansas City Sexiest Singles (an auction bene-fiting Big Brother Big Sister) and KC Business Magazine as a 2011 Rising Star.

Save the Date:  Flu Shots & Health Screenings
Healthy for Life invites all faculty and staff to Pierson Auditorium on Wednesday, October 5th or Health Science Building on Thursday, October 6th from 9 a.m. to 1 p.m. for health screenings and flu shots. Flu vaccines are FREE for those 12 years and older enrolled in the UM Choice health care plan and bring their individual Coventry insurance card. Those not enrolled in the plan, can pay $15 cash or check at the event.  Health screenings, which include cholesterol, blood pressure, glucose, etc. are available for FREE to all faculty and staff, regardless of insurance coverage. Speaker Spotlight: Josh Wolf


Josh has been coaching multi-sport athletes for over 3 years and is a USAT Level I certified Coach.  He has worked with triathletes, cyclists and runners at all levels ranging from the “I literally can’t swim 25 meters without stopping” to the “I want to go to Kona” athlete.  Starting by successfully hosting triathlon clinics at a local health club, Josh eventually formed his own coaching business called Endurance Sports Clinic, in which he lead a small group of athletes to great success.
Now he has joined forces with Ben Schloegel, Jeff Whitecotton and Liz Wielding to form the most comprehensive, experienced and involved triathlon team in the Kansas City area: Team EMG. Here Josh has helped coach many athletes to new PR’s, Nationals and even World Championships, both on an individual and team-led level.
A scientist at heart, Josh stays up to date with the most recent research and coaches based off of the most cutting-edge tactics. Also, as athlete himself, he understands that sometimes there is clear line between lab life and real life.  Thus, he balances theory with reality to give you the most fluid, sound and advanced training available, all the while striking that healthy medium between training and life.  Ask anyone who has worked with Josh: the results you get are unparalleled.

Education and Personal Training

Josh holds a degree in Kinesiology from K-state.  He has been a personal trainer since 2003 and holds two nationally recognized personal training certifications: the NSCAand ACE-CPT.  In addition, he is an accomplished instructor at an accredited vo-tech College, Pinnacle Career Institute. Teaching students a wide variety of classes from Exercise Physiology and Kinesiology to Sports Nutrition and Exercise Psychology. Josh is an expert on how to train clients get get the maximum results.

Upcoming Campus Event


The book, Fast Food Nation, was on the New York Times bestseller list for more than two years, as well as on bestseller lists in Canada, Great Britain, and Japan. It has been translated into more than twenty languages. 

Share your thoughts and/or listen to the group discussion on Eric Schlosser’s book, Fast Food Nation. The discussion will be moderated by Scott Curtis, UMKC Research and Instruction Librarian. Be there for this lively discussion on Wednesday, October 26th, 2011 from 3:00p.m.-4:30p.m. in Room 303 at the Miller Nichols Library.    

The book discussion is  presented in conjunction with the Division of Diversity, Access, & Equity and the UMKC Social Justice Book and Lecture Program.  Mr. Schlosser is speaking on his book, Fast Food Nation, Tuesday, November 1st, 2011 at 6p.m. in the UMKC Pierson Auditorium.

Since 2007, UMKC’s Social Justice Book and Lecture Program has featured an author to deliver a presentation that challenges our notions of justice, power and humanity. Eric Schlosser’s work, Fast Food Nation,  has been chosen as the 2011 Social Justice Book by this year’s selection committee.
During the past four years, more than 1,500 students have participated in the Social Justice Book and Lecture program through the College of Arts & Sciences, Business and Education 100 courses. The program was expanded to a city wide initiative with local churches, libraries, book clubs and civic organizations joining UMKC in this important endeavor to learn about the issues that plague our communities.
UMKC’s Social Justice Book and Lecture Program provides students, staff, faculty and community members an opportunity to engage in a discussion that is challenging, rigorous and represents the vital importance of academic environments that allow for debate, passionate discussion and academic freedom for all.

Speaker Spotlight: Dr. Lynn Rossy


Lynn Rossy, Ph.D.

Dr. Lynn Rossy is the Health Psychologist for Healthy for Life, the UM system wellness program for faculty and staff on all four campuses.  She is involved in developing, delivering, and researching programs that target stress reduction, physical inactivity, obesity, and wellness in the workplace.  She has been teaching Mindfulness-based Stress Reduction Programs since 2000—receiving her training from the Center for Mindfulness in Medicine, Healthcare, and Society in Massachusetts.  She developed an empirically-validated 10 week program (available in-person or on-line) called “Eat for Life” which helps people have a healthier relationship with their food and their bodies and writes a weekly blog called “Tips 4 Mindful Eating.”  She is involved in efforts to create a psychologically and physically healthy work environment at the University of Missouri.
